Where to eat healthy in Dallas: Yucatan Taco Stand


Let’s all be honest with ourselves, the best part about Dallas is the food. The only thing any of us ever plan, or look forward to, is going out to brunch for bottomless mimosas or happy hour to get chips and salsa with a margarita on the side. Moving to lower Greenville turned my restaurant outings into a very regular occasion, especially now that it’s patio weather. All of the extra calories one can consume in a normal serving at a restaurant can be problematic though. I’ve made it my goal to do some research, dig up a little dirt on these popular restaurants, and figure out who actually has healthy options for those of us not looking to pack on the extra lbs. Brazil Nuts & Best Friends: Both good for your health!

FriendsI’m coming close to approaching the two year mark since I graduated from Indiana University and I’ve made an effort to revisit my college campus at least once a year since I’ve left. It’s filled with so many incredible memories that fill my heart with joy the second I drive back into town. It also helped that it was seventy degrees there this past weekend with a blue sky, big white puffy clouds, and a sun that wouldn’t stop shining!  (more…)

Peanut Butter Banana Egg Pancakes

Pancake5 I don’t know about you guys, but breakfast is by far my favorite meal of the day. I look forward to the smell of the coffee brewing and the soft light peaking through my windows as I cook in my pajamas. Pancakes and peanut butter are my two guilty pleasures and the thought of the two of them together makes my mouth water. I finally figured out a way to eat my favorite things in a healthy way, and thank goodness, because I eat these delicious banana egg pancakes at least 3 times a week.
