BRRR. It’s officially winter in Texas! Unfortunately, that also means flu season! Kick those flu symptoms in the butt with my healing bone broth chicken soup! This simple soup is packed with flavor and so many amazing healthy ingredients that will get you back up on your feet.
Growing up, my mom would ALWAYS make me chicken noodle soup from scratch. There was something about that soup that would immediately make me feel better. I didn’t know until recently that cooking the chicken in the broth added healing properties to the soup that actually did cure you if you continue eating it on a daily basis. After moving out on my own, I had to do my best to recreate this magical soup for myself! I spice things up with home-made bone broth from a local organic grocer and freshly ground ginger.
Bone broth is rich in minerals that not only support the immune system, but it also contains healing compounds like collagen, glutamine, glycine, and proline. The minerals in bone marrow are known to strengthen one’s immune system and have been known to cure some patients suffering from an autoimmune disorder. The collagen in bone broth helps to reduce intestinal inflammation, heal any leaky gut symptoms you may be experiencing, and provides nutrients to your hair, skin, and nails. The glutamine helps support joint health, the glycine improves sleep quality and memory, and gives you more energy! Overall, it’s one of the best things you could drink as often as possible. I picked up some bone broth from whole foods for the convenience, but making your own is quite simple. If you ever pick up a rotisserie chicken for dinner simply save the bones and throw them in a crock pot on low with water and any veggies you might want to add for flavor for a day or so, BOOM, home-made bone broth!
I bake my chicken in the oven rather than boil it in the broth because the broth is already so flavorful, but that’s personal preference. I find that it’s quicker, and easier, to use chicken breasts that I can easily shred and add to the soup one bowl at a time.
After an easy 40 minutes or so, you have enough soup to last you the whole week! Or a few days of illness if you’re eating this for breakfast, lunch, and dinner….which I’ve totally done before. Trust me, you will feel magically better in just a few days!
- 2 Quarts chicken bone broth
- A few cups of water to dilute the bone broth
- 1 Yellow onion
- 1 Parsnip
- 1 Celery Stalk
- 6-8 Carrots
- 1 Tbsp Grated ginger
- Big bunch of parsley
- 4 Chicken breasts
- 1 Tbsp Olive oil
- Salt and Pepper
- Preheat oven to 350 degrees
- Cover baking sheet with foil
- Cover chicken in 1 Tbsp of Olive oil, salt, and pepper
- Roast in oven for 35 minutes
- Let chicken cool before shredding for soup
- Bring your bone broth and water to a boil
- Chop onion, carrots, and celery
- Peel parsnip
- Grate ginger
- Add all ingredients to boiling water for 25-30 minutes
- Roughly chop parsley and add in the last 10 minutes of boiling
- Remove whole parsnip from broth (this element is just for flavor)
- Add salt and pepper for taste before eating
- Add shredded chicken and enjoy!
